2/3 c. butter (softened)
2 c. all purpose flour
2 tbsp. lemon juice
2 – 8 oz. packages of cream cheese (softened)
4 tbsp. milk
2/3 c. brown sugar
1 c. chopped pecans (optional)
1/4 c. granulated sugar
2 large eggs
1 tsp. vanilla extract
Cream butter with brown sugar. Add in flour, nuts to make a crumb mixture. Measure off 2 cups of the mixture and set aside. Add remaining mixture to a greased 13×9 baking pan and press down to form bottom crust. Bake at 350º for 12-15 minutes or until lightly browned.
Blend sugar and cream cheese until smooth. Add in eggs, milk, lemon juice and vanilla extract. Beat well. Spread over the baked crust. Sprinkle with the remaining crumb mixture and bake an additional 25 minutes at 350º.
Cool and cut into squares. Cookies must be stored in the refrigerator.
Makes approximately 24 cookie bars.
