2 cups of all purpose flour
1/2 cup of creamy peanut butter
1 c. Crisco Butter Flavored All-vegetable shortening
3/4 c. firmly packed brown sugar
1/2 tsp. salt
40-45 chocolate-covered miniature peanut butter cups
1 lg. egg
1 tsp. vanilla extract
1/2 c. granulated sugar
1 tsp. baking soda
1 c. semi-sweet chocolate chips
Heat oven to 375°. Line baking sheets with parchment paper or use non-stick cooking spray.
Combine shortening, brown sugar, granulated sugar, and peanut butter in a large bowl. Beat until well blended. Beat in egg and vanilla extract.
In a separate bowl combine flour, baking soda, and salt. Mix into the shortening mixture at low speed until blended. Using around a teaspoon of dough, flatten in your hand and place one peanut butter cup on top. Form dough around peanut butter cup until it is fully covered. Place approximately 2 inches apart on the cookie sheet.
Bake for 8 – 10 minutes or until lightly browned. Remove immediately to a cooling rack. Once they are cool add the chocolate glaze.
Melt the chocolate chips in a microwave safe container for one minute and stir, if more melting is needed put in for 15 second intervals. Stir and dip each cookie into the chocolate and let stand until chocolate is set.
Makes approximately 40 – 45 cookies.
