3/4 c. dry bread crumbs (I use the pre-seasoned type)
1/4 c. brown sugar
2 tsp. chili powder (or more to taste)
1 tsp. garlic powder
1/2 c. (1 stick) of butter melted
6-8 boneless skinless chicken thighs
Mix all the dry ingredients together.
Melt butter in a microwave safe bowl. Roll rinsed chicken thighs in the melted butter, and then in the bread crumb mixture.
Place breaded chicken in a 13×9 baking dish. Sprinkle any left over bread crumb mixture over the top of the breaded chicken, and then pour remaining melted butter over the chicken.
Bake in a 375º oven for approximately 50 minutes or until tender.
Variation: I have cut up red potatoes and breaded them and added them to the pan with the chicken while baking and that comes out great too.
